Someone was asking about a traditional Spanish pork recipe … Here is my version of pork in sauce which after about 6 attempts to get it to taste like one we have in our local Tapas bar, I finally got it right and make it in the Slow Cooker …
“Carne en Salsa”! Living in Spain, you have to now and again. A slow cooker favourite which can easily be prepared the night before, just put everything in your crock pot, cover and leave in the fridge. In the morning, turn it on lowand enjoy your day … It is fine for a good 8 or so hours.
1kg cubed pork – The darker the meat the better
2 tins chopped tomatoes
2 tblsps olive oil
6 – 8 tblsp tomato frito (the more intense the better)
1 red pepper chopped
1 green pepper chopped
1 onion finely chopped
3 cloves garlic finely chopped
1 chicken stock cube
2 small cups of water (about 100 mls)
4 tblsps flour – just normal plain flour
Good splosh of red wine
2 or 3 bay leaves
A good sprinkle of mixed herbs
1 tsp hot paprika Salt and black pepper
Just put everything into the slow cooker, give it a good mix, and cook on Low for about 8 hours … and don’t forget the crusty bread to mop up all that lovely sauce!
Alternative ways to cook this dish …
This can also be made in a pan on the stove, just simmer (lid on), or baked in the oven (covered) at about 180 deg C – Cook until the meat is really soft – Or in a pressure cooker on full pressure for around 12 – 16 mins. If towards the end of the cook time it is slightly thin, just simmer for a little while to thicken naturally or if in the oven, return without a cover for half an hour.
